Independence Day – 18th September

Chilean Independence Day marks the country’s independence from Spanish rule. Although it was declared in 1810, it wasn’t until February 1818 that full independence was achieved.

Asado al pala (lamb on a stick) is a favourite national dish, along with empanadas, the national pastry. These ones were handmade in the Isle of Man by Miguel.
